Capacity
Allow sufficient ventilation around the cabinet and confirm the clearance requirements for the selected model. Built-in installations require additional side clearance and mechanical ventilation.
Temperature and placement
Food Standards in Australia and New Zealand require potentially hazardous food to be kept at 5 °C or colder during display, unless the business can demonstrate that it has a safe alternative system in place.
